RECIPE: Cheesy Ham Cups

This weekend I was brought breakfast in bed….well, it would have been if I hadn’t have gotten up.  This new lifestyle has me rising early.

The boyfriend was finishing up in the kitchen and made me these absolutly delicious Cheesy Ham Cups.

Low carb.  High protein.  Delicious!

Here’s how he did it:

Ingredients for 6 servings:

  • 6 slices deli ham
  • 1/2 cup finely chopped green onions
  • 2 cups (8 ounces) shredded Cheddar cheese
  • 6 eggs
  • 1 carton (8 ounces) plain Greek yogurt
  • 2 TBSP minced fresh parsley or chives

Place each ham slice into a greased 10-ounce ramekin or custard cup.  He used our Pyrex ramekins as shown above.

Sprink onions and 1 cup of the cheese into the bottoms on top of the ham slices.

In a bowl, beat together the eggs and yogurt until blended and pour over top of the onion and cheese.

Sprinkle tops with remaining cheese and fresh herb.

Bake uncovered at 350 degrees for about 30 minutes or until done.

Nutritional Info: Each cup has 286 calories, 19g fat, 5g carbs, trace fiber so 5g net carbs, and 22g protein.

This will definitely be making another breakfast appearance soon.  Yum!
